i will usually take the 10 def > 9 stam.
avoidance is not nearly as useless as some ppl seem to think it is. there is more to tank gearing than how much stam you can stack.

Approach the question of whether or not you're properly geared for an encounter by looking at the ilevel it's tuned for. If you're at Algalon 10 it means you have done hardmodes that will grant you gear with a level of 226 and 232 and by that logic you are actually outgearing the encounter.

I agree with all of his gemming except for the legs and helm. The 6 dodge socket bonus on helm isn't worth it, so put 30 stam. Likewise the legs require a red and a yellow, so throwing 2 hybrids in there isn't worth the 6 stamina.
For any stamina socket bonus for 6 or more, as long as I'm only using one hybrid, I go for it. That makes the choice 10 Defense or 10 Dodge in exchange for 9 Stamina. That's the exact same choice you make on your shield (20 Defense vs 18 Stamina). That's the break point for me.
His legs, for example, are 20 Dodge/Defense in exchange for 24 Stamina (or 10 for 12). That's above my breakpoint of 10 for 9, so I skip it. Likewise the helm is 16 for 15 (10 for 9.375), so again over my breakpoint.
Stamina is good, but avoidance is also good and often under appreciated.

You're in fury gear on the armoury, but going off the stats you listed, I'd say you'll be okay, in terms of how the encounter was intended you do outgear it. Just be aware that he will still hit you like a freight train, he is very good at devouring unlucky tanks at the pull, which is where we usually lose a tank if we're going to. Talk talk talk SPLAT. Have your best geared tank make the pull and have the healers pre-load some big heals just to be safe.
