To your first question - the game is
always
most profitable when played at its end. You can however disable all of your experience gains (NPC in Orgrimmar/Stormwind, by the... Battlemasters?), but I am not sure if that will cause quests to reward you with more gold.
To your second question - it's situational. Make sure you tell your group that Holy is your MS, and Shadow - OS. If there is a cloth user in the group, whose MS is DPS (Mage, Warlock, Shadow Priest), niceness dictates any cloth DPS should go to them first, and you can roll on it only if they agree to share. Or if they are not part of the group. So in your group, where you have a mage and a warlock, any cloth DPS gear should go to them by default, unless they are okay with you rolling.

a. Not really, why not just install wotlk and do the same thing at 80? Also you would need to be 70 before you could do this (assuming it still functions this way). From your wording I couldn't tell if that's what you were implying or not.
b. If you're in a dungeon running as shadow and some dps cloth drops that's an upgrade for you you should "need" it. If you were healing like in your example the mage and warlock have priority over you but it never hurts to ask the group.

Hmm, I might've misunderstood the second question...
My opinion is that you always roll Need on items of your main spec (and you let the group know beforehand if you are running a particular dungeon with offspec). Since both healing and DPS priests wear cloth itemized similarly, you could probably negotiate it with the group.

Second question has been answered, to the first... No. Assuming you have WotLK installed and activated for the account your shaman is on, you can't even do that. The game won't even let you log in if your installed version and account status don't match (as far as I know). Not to mention you'd need to get all the patches anyway so there won't be any glitches with "new" item models and such.
You can stop your xp gains like Argent said, but there's no point in that. Even if it does convert quest xp to gold like that, you're still better off leveling to 80. You'll probably end up skipping most quests anyway by doing that and they're there for you to do much quicker when you're 80 if you still want to, even tho there are much quicker ways of getting gold at that point.

It might be. It would make sense as a lvl 70 quest would be gray to a lvl 80 and orange to a lvl 70 character and thus give less "xp" to the 80. In any case, if you'd be doing them for profit only, it's not as efficient as e.g. dailies and trade material farming. Achievements and/or simply immersing yourself in the story are obviously another thing.
