Addons can mess with framerate if they are continuously doing something and are badly programmed or heavy on cpu usage.

Turn them all off and turn them back in one by one to see which one cause the problem?

Unlikely to be Xperl or Bartender...what you want to try is all the addons that do a lot of stuff in big fights...like WH said, turn all those off, and then turn them back on one at a time until you find the troublemakers.
Also, check to see if multiple addons are trying to do the same thing. They may be interfering with each other somehow (For example, I believe Xperl and Bartender both have controls for moving the shaman default totem "bubble bar" around - make sure to disable any such overlapping functions.)

I think Questhelper, Ratingbuster, FuBar, Recount (in combat), DBM and AtlasLoot are the most memory consuming addons in the list. But this does not prove that the affect your frame rate, just felt it could be good to know ^^

Memory consuming and CPU intensive are two different things. Atlasloot eats a TON of memory (respectfully) but it doesn't
do
anything with that until you actually look at the addon. Just being memory intensive isn't going to reduce your FPS, but addons that are constantly working will.

Be sure to clear your Recount log often. Recount is known to cause problems if the log gets too large.
