I'm a lot more tolerant of early-level questions, ever since I joined PvE server. In the last week, I've seen (all levelling):
a) Ret pallies without Two Handed Weapon Spec
b) Ret pallies without Judgements of the Wise
c) Ret pallies without Sanctified Retribution
d) Ret pallies taking Eye for an Eye over Crusade
e) Prot pallies without Imp. Righteous Fury
f) Prot pallies without Blessing of Sanctuary (?)
The amount of stupidity out there is amazing, so I'm glad that there are still some people willing to ask for help.
Having said that, see Quest's comment. Helpful threads are helpful.

Um, my only advice would be to keep chipping away at the Paladin.
When mine was Ret in the low levels, it was mind numbingly boring. "Judge, melee, melee..."
However, I enjoyed myself much more when I started Prot grinding in the 50s. Basically, they require patience to enjoy them....If that makes sense at all. :|

Ret is the way to go, as it has little downtime, but at first I found it very mundane. But try to stick with it if you're bored, Paladins get a bit more rewarding at higher levels.

Hopefully I can answer your questions in order here:
1. Spec: Ret at first, no questions. Later on prot will be viable, and svirve wrote a thread on how to do that, but don't even try prot leveling until you reach the level he recommends. It'll be much slower going than ret. You might want to try prot once it's possible though. Ret will still be fast to level with at all levels, but Judge, CS, Alt+Tab can get a bit boring after 5 days of /played.
2. Gear rewards: If you decide you want to tank later, mail and later plate are mandatory. Until you get a bit more survivability I strongly suggest only taking mail to avoid constantly healing yourself, bandaging, and drinking as ret. Once you start facerolling stuff in a matter of seconds though, a few leather pieces aren't going to kill you, as long as they have the right stats on them.
3: Professions: You already have a level 80 but you've taken a gathering profession on a new toon without taking a relevant crafting profession. This either means you just wanted the herbalism cooldown or you want the money. If it's the first one, engineering is a pretty fun profession to give an alt you're leveling, and enchanting might also come in handy. Obviously Inscription and Alchemy are choices if you want to gather your own mats. If you just want the money, but you don't want an extra gathering profession, either try to level Alchemy or Inscription in tandem with Herbalism, take Skinning which requires barely any effort at all, or don't bother with a second profession. If you just care about raiding professions, BS+JC is the best combination for paladins, along with everyone else.
