I agree... Choose whatever spec interests you. 2 DK's rolling together is jus faceroll. You can pull jus bout every mob you see in sight and still walk away unharmed. Jus an opinion you might want to roll with one of you as tank spec and that way when you need to do dungeons it will be easier to find groups.

Since you'll be leveling together it really doesn't matter. If you leveled alone Id say go Unholy since you don't stop pulling. Unholy is brilliant for solo leveling.
Id advise that you do not take the same spec so that you can 'learn' 2 different specs at once. Otherwise just play what you enjoy

And for those of you who are not married...Wife playing WoW = You playing MORE WoW.
Playing MORE WoW isn't always good ;)
To the thread... Roll whatever spec you both feel is you. Anything you should meet to level 80 should be a walk in the park, so it doesn't really matter.
However... One of you being blood can make it easier to 2 man certain 5man quests.

I have thrown together a leveling guide that might help you and your wife. Hopefully it can help. It does give you a spec to fill out to progression for all three specs (with a tanking version too). I would actually suggest that you prioritize tanking while your wife works on dpsing (assuming you are the more advanced player). That way all you guys really need to do is pick up a healer when you want to run a dungeon.
Link to the guide is in my signature.
