Forgive me if this was mentioned before:
In a future patch, Blizz should implement an "Abandon Flight" button for FP's, so if you make a mistake or something comes up, you can just bail at the next found waypoint.
Yeah 4 extra mins is no big deal, but I'm pretty sure a couple people will agree with me that it is terribly annoying, and we have all clicked the wrong FP or have decided mid-flight that you forgot something (don't lie, it happened to all of us), And seeing all the other convenience gimmicks that Blizz put into the game recently, this is hardly anything more than another one.

If you're on a really long flight path chain (moonglade to silithus! yay!) you can break it by logging out. When you log back in you'll stop at the very next connection point.

FP, not just the next one in line. That way you won't get FP's you shouldn't know exist yet.

Do I have to Ninja-AFK for it to work? Uhm, no. Logging out as Loki suggests works fine. When you log back in, you will still be in flight, but you will land on the next flight master on the journey.

That doesn't happen either. You don't pay the flight fee for each 'step' on your flight until you actually begin that step.
So if I was going from Dalaran to Wyrmrest to Wintergarde, and I logged out before reaching Wyrmrest, I'd only get charged for flying to Wyrmrest, and I'd land at Wyrmrest.

TIP:
You can attempt to enter a battleground. Then /afk out of it. When you load back up your flight will stop at the next flight stop. This has worked every time for me. Logging out has not always worked.
AV is your best bet to get one fast.
You're probably not logging out for long enough for the server to acknowledge that you're not in the game anymore.
Neat trick, if it weren't for the Deserter debuff...
