Pretty sure no means no. Their goal is to merge all accounts to Battle.net, un-merging your account would defeat their goal.
if you noticed the situation that I had mentioned hearing about it done, it was because of an unauthorized merge. My point is that it is possible under certain circumstances and that you would have to approach them to unbind/merge to a different email directly. Since the OP asserts that s/he is having issues typing the email that is used as the username, it makes perfect sense that they would revert the merge or at the very least allow them to switch to an easier to type address.
The latter is probably more likely. To me it looks like they're going to make it mandatory by Cataclysm to merge all WoW accounts into Battle.net account.
Contact customer support if you're having troubles, OP. It's your only resource, as there's no way that an end user can directly unmerge their account (or alter the log-in information).

Write your e-mail in notepad, or whatever - you can copy this very hard to do character:

Paste the full e-mail into the account-field of WoW's startup screen.
Tick the "Remember Account", and login

Doesnt work. To WoW your account name is your account name. For example, lets say my account name is 'buryyourdead45'. If i click the 'remember account' it remembers my account name. If i merge my account, the account name is still 'buryyourdead45' so it doesnt save the email.

That's why I specifically wrote "E-mail", as in the e-mail you use with your Battle.Net-account. Ticking it remembers the last thing you attempted to log in with, ergo your Battle.Net-account.

I don't know then. I merged my account and even though i check the box, i still have to enter my email in everytime.

I can't understand why this doesn't work:
- Start wow
- Type your e-mail in the login
- Tick "Remember account name"
- Login
- Exit wow normally
- Next time you start wow, your e-mail is already in the account field.
- ?
- profit!
if it doesn't, check that your config.wtf file in the WTF directory is not read-only and wow has permission to write in it (especially if you use vista)

My login screen saves my email address (Bnet merge). Not sure where you get that it doesn't. Once you merge your account....you don't even use the account name for anything. I use my email address and password (and authenticator) to log into everything.
