5% is worthless and will hardly effect anything. your main goal as a holy priest is be a critical healer, meaning you can see a target who just hit 5% health and quickly throw out a life saving heal while those HoT's a druid cast on him are waiting to tick. Honestly, don't stack crit at all. Kings, Arcane Int, Boomkin's, GotW all give critical rating. spend you ilvl points on haste and get those Flash heals down along with PoH. If you can managed a sub 2 second PoH without Serendipity, you can perform wonders when you do have 3 stack of Serendipity.

As you can see i have two Throughput & Regen trinkets. These are the BiS trinkets for a holy priest as the passive regen and spell power give the best of both worlds. The gem selection allows me to be balanced in all aspect of play. I'm 4 shards of the hammer, so i can include it in my BiS list. If your not, then i suggest getting
The Lifebinder as it will give you a massive 3.66% haste. Allowing you to possibly attain more crit rating if needed.
I'm currently trying to re write the Holy Guide with this philosophy in mind however its taking a very long time getting everything together. I honestly, after doing some of the hard modes, feel that holy priests should try and gear the same a druids in terms of haste capping or at least no relying on stacks of serendipity. Because once raid wide damage starts coming in, you won't be able to build a 3 stack, cast PoH and then build another 3 stack up.
In general, Try and have as much thought put and fast, effective healing as possible, without relying on proc's to provide it for you. You and your raid will see a big difference in effective and critical healing.
Edit: Before you ask, i don't look for spirit on items anymore, Intellect is now your regen stat. Stack that instead (hence Intellect gems and high mana)

There is no ideal soft cap for crit. And intellect with the two Mp5 trinkets won't be a major factor because your getting a solid amount of regen from them alone, replenishment will cover the rest even with a 20k mana pool unbuffed, which is stupidly easy to get now-a-days. 25k mana raid buffed is what your aiming for to get good replenishment returns.
Meteorite Crystal is a good alternative if your struggling for mana. but you shouldn't be in all honesty. There are plenty of items out there which have both crit and haste.

I'm actually having tremendous success with a similar prioritization as disc. I've managed to replace more than a few spirit pieces with crit/haste pieces, and I've gotten my haste up to 18% from gear, while maintaining 28-29% crit. I could push my crit higher and my haste lower, but quite frankly I prefer the opposite. My throughput has shot through the roof and I've hardly been affected by the penance nerf.
Getting my int up was crucial, though. A 30k mana pool gives you an initial pool and regen that's high enough to prevent ooming in a fight. And while my sp did dip a bit from regemming
int/sp hybrids again, I have the proc from
Talisman of Resurgence ready when needed.
I've never been happier or felt more effective than I do with this current setup.
