Monsters that won't kill you easily but survive long enough so that you don't have to go looking for another one all the time.
The Razelik servants in Blasted Lands or the 3 "bubbled/immune" quest chamis in shadowmoon valley (those with totems around them) are good candidates.

If you're 67 and above, the perfect alliance spot is just outside of Wildhammer Stronghold in Shadowmoon Valley. The Infernal Invaders (or whatever they are) that attack the groups of 3 dwarves are constantly respawning. Just get the cheapest low-level weapon you wanting to skill up, equip it, then right-click once on the monster. Your character will attack until it dies. Repeat, always repeat. The low level weapon should not cause any aggro.
I skilled up 3 skills from 1 to over 300 in under an hour that way.

If you buy some cheap gear with intellect you will get your skill up faster too. You can also beg a mage you give you the int buff.

The way I've done it is to equip a very low level weapon, like
http://www.wowhead.com/?item=2131
, and then just hack away at a monster of about level 30. At level 70 you will take almost no damage, and can spend 5-10 minutes attacking a single mob without dying. I did this on my mage, but as a melee class you would of course have to unequip gear that increases your damage before you begin.

edit: And I always train my weapons on that banished pit lord on top of the black temple.
